I push this pan hard with daily cooking at medium-high heat. The ceramic coating has not chipped or flaked anywhere. The three-layer application clearly adds meaningful durability.
The sidewalls square off the egg beautifully as it rolls. The finished log shape is rectangular and clean exactly like professional tamagoyaki. The design really works.
This pan earns its place in my kitchen through consistent performance. I make tamagoyaki three to four times a week and the pan handles the repeated use without any degradation in nonstick quality or structural integrity. The forged base shows zero signs of warping despite exposure to my high-BTU gas burner. The ceramic is the same smooth gray it was on day one.
